Offal waffle recipe

This blog post would be incomplete without a delicious recipe to get you started. 

Ingredients:


Instructions:

  1. Chop the red and yellow peppers into chunks, lightly glaze them with olive oil and roast them in the oven for 10-15 minutes along with the potato waffles. Alternatively, you can fry the peppers with the chopped onions.
  1. Chop the onions into cubes and fry them until golden brown. If you prefer to fry the peppers, include them at this stage.
  1. Chop the offal into small chunks so they are easy to cook and set aside.
  1. Chop the gluten-free spicy sausages into slices and fry them with the onions and peppers until they are cooked through.
  1. Add the offal into the pan and cook through to about 75%, leaving some medium-rare tenderness.
  1. Either whisk the eggs and add them to the mixture or fry the eggs.
  1. Place your waffles on a plate and add your offal-sausage mixture on top. If you have fried the eggs, add them on top, sunny side up. Baked tomato beans are a good addition to this treat.
